The Range

Three tins. Each one built around a single ingredient we can name, place and trace.

  • Kampot peppercorns

    Kampot Pepper

    Cambodia’s protected-origin peppercorn, sharp and floral, against the oil-rich flesh of the fish. Slow, warming heat rather than a hit of chilli.

    Fish Sambal

    Chilli, shallot and shrimp paste, ground the way it is ground at home, then folded through the tin. The one you eat straight from the lid with rice.

    Tuna with Calamansi

    Calamansi cuts where lemon would only brighten: sour, faintly bitter, unmistakably of the region. Tuna, oil, salt, and nothing else in the way.

Provenance

Southeast Asia has been salting, drying, fermenting and preserving fish for as long as it has been putting boats in the water. Tinning is only the most recent chapter of that, and it is not a European invention that arrived here. It is a technique that met a tradition already several thousand years deep.

We work with that inheritance rather than borrowing an Iberian or Breton idiom and dropping local ingredients into it. The recipes come from the region’s own kitchens and the fish comes from the region’s own waters.

Practice

Three commitments we hold the business to.

  • Transparent supply chains

    Every tin can be traced back through the chain that filled it: the vessel or farm, the landing site, the processor. Not a region on a label, an actual route.

  • Sustainably sourced

    We buy from fisheries managed for the long term, and we would rather drop a line than push a stock past what it can carry. Sourcing is reviewed as stock assessments change, not set once and forgotten.

  • Verified ethical practice

    Labour conditions at sea and on the processing floor are checked by someone other than us. Verification is what separates a claim from a commitment, and it is the part of this we are least willing to soften.
